Sapphire Rî-fusion
Recipe:
Sapphire Foam:
3 drops Rose Water
3 cl Monin Blue Curaçao (alcohol-free)
10 cl Bombay Sapphire
6 cl water
100 g caster sugar
2 sheets gelatin
Juice of 5 limes (hand pressed without any device - to avoid bitterness)
Soak gelatin in cold water (around 5 minutes). Add all other ingredients in a pot and heat till sugar dissolved completely. Take pot from heat, add gelatin; stir till it is dissolved and let mixture cool down. Pour everything through a fine strainer into an espuma siphon and add 2 nitrogen cartridges. Store in refrigerator. (It is possible to store the mixture for more than one week!)
Orange Blossom Simple Syrup:
500 g sugar
400 ml water
1/4 ounces orange flower water
Bring water to boil. Add sugar and wait until sugar completely dissolved in water. Add orange blossom water. Chill down and store in a bottle. (It is possible to store this mixture for several weeks!)
Sapphire Rî-Fusion
4 cl ounces Bombay Sapphire
Half lime cut into thin wheels
2 cl orange blossom simple syrup
12 cl club soda (or mineral water)
Fill up with Sapphire foam
Fill highball glass 1/2 with cracked ice. Add all ingredients except of foam and soda and stir.
Fill the glass 3/4 with cracked ice - fill up with soda - stir again and finally fill the glass with the Sapphire foam.
Garnish with a dried lime chip and a wedge of fresh lime. Serve with straws and stirrer.
Touches:
Taste:
The essence of the drink is the specific taste sensation of Bombay Sapphire gin! There are no aromas, which adulterate the masterful composition of the gin - there are just aromas which complement it!
Rose and orange flower water are used very sparely - but accentuate the flowery taste of the gin.
Lime is the usual connection to Bombay Sapphire and is also a great team player.
The taste is straight forward Bombay Sapphire! No additional fancy fruit juices - no overpowering syrups or liqueurs! Like a really fancy variation of a Sapphire & Tonic!
Balance:
The both layer should be drank together. Both are sweet & sour - the foam layer is a bit more sour - featuring the lime (juice). The liquid layer is more on the sweet side - featuring more the orange blossom simple syrup, (the neutral) water - the lime wheels are more decoration - and are giving less flavor to the drink - because they are not muddled.
Both layers together are 50% sweet, 50% sour - and 100% Bombay Sapphire without the strength of a pure spirit (or a Martini Cocktail)!
Look:
The look is stunning: a clear layer with some lime wheels in - and over it a layer of light blue foam, reminiscence to the blue Sapphire bottle!
The really reduced garnish features just a fresh lime wedge plus a crispy lime disc! Nothing should distract of this stunning drink and its protagonist Bombay Sapphire!
Ease of preparation:
The precedent preparation is a bit more complex - but for a sophisticated and creative drink it is anticipated to have further preparations!
The "a la minute" preparation is very easy and could be done, if adequate prepared in almost every environment (bars, clubs, parties, functions).
The premixes are having a long durability and do not have to be used immediately.
Creativeness:
This drink seizes the contemporary trend of molecular mixology - and features different textures, different impressions of the same topic: Bombay Sapphire!
The creativeness is shown most notably in the extreme reduction to the basic flavors of the featured spirit and the reiterations from different views of the same subject.
The recipe faces not the most fancy and complaisant way to present Bombay Sapphire, but rather the full character of the gin - and an adult and connoisseurs view on mixed beverages!
