Und hier ein Export von mir. Nochmal die Gedanken zur Bedeutung von Eiweiß für das Geschmacksempfinden aus dem Cuisine Style Thread:

Eiweiß ändert die Textur des Drinks.
Der Drink bekommt nach einem Hardshake eine Schaumigkeit.
Die eingebundene Luft wird frei und das Mundgefühl beim Trinken ändert sich.

Interessanter finde ich die Frage nach dem Geschmack.
Seit 10 Jahren weiss man ja erst, das es neben süß, sauer, bitter, und salzig noch ein weitere Geschmacksqualität gibt: Umami
Eiweiß aktiviert diese Geschmacksrichtung, die in der Regel als sehr angenehm empfunden wird .
Umami reagiert auf das Vorhandensein der Aminosäure Glutaminsäure, die im Ei reich vorhanden ist.
Das Einbringen von schaumigem Eiklar verändert also die Textur und bringt vorallem eine völlig neue Geschmacksdimension in den Drink ein.
Das ist die hohe Schule der MixKunst.
Das ist für mich weniger Cuisine Style, sondern gehört in den Kompetenzbereich der Molecularen Mixologie.

Alle Zutaten in ein Mixglas geben und mit einem
geeigneten Stößel gut zerdrücken. Mixglas mit Eiswürfeln füllen und kräftig shaken.
Zutaten durch ein Teesieb in eine vorgekühlte
Cocktailschale umfüllen und mit einer Selleriestange garnieren
Die Kombination aus Obst, Gemüse und Premium-Spirituosen
wird Booster genannt.

1 gehäufter BL Puderzucker
3 cl Zitronensaft (frisch)
Alles gut im Shaker muddeln und weitere Zutaten hinzugeben :
5 cl Marie Brizard Mandarin
3 cl Orangensaft
1 BL Eiweiß
2 dashes „Bitter Truth“ Orange Bitter
Alles mit Eis shaken, double strain auf Eis in einem Whiskey Tumbler. Deko : Cocktailkirsche und große Ingwerscheibe

1,75 cl Grenadine

Saft einer halben Zitrone
1/2 Teelöffel Zucker
1,5cl Grenadine
1 Eiweiß
Fill a tall mixing glass two-thirds with ice. Add the gin, grenadine, lemon juice and raw egg white. Shake vigorously for 30 to 60 seconds to form a good froth. Strain into a martini glass and serve immediately.

7.5 ml Absinth
1 Eiweiss

1 Dash Peychaud’s Bitters
Shake all ingredients hard with ice and strain in to an ice-filled tall glass. Top off with soda water and garnish with a few dashes of Peychaud’s bitters.

Pour the liquids in a mixing glass. Beat the egg with the sugar, and add to booze mixture. Ice well, shake long! and hard!, and strain into a chilled cocktail glass. Dust with cinnamon, nutmeg and, Spencer says, “pink sugar.”

Add ice and shake with carefree exuberance for at least 10 seconds. Strain into chilled cocktail glass and garnish, of course, with a cherry.

* 2 1/4oz gin
* 1oz heavy cream
* 1 egg white
* 1/4 - 1/2oz lemon juice
* 1t sugar or 2t simple syrup
* 1t kirsch
* club soda
Shake hard with lots of cracked ice until your hands are stuck to the frost-crusted shaker and you want to die. Strain into a goblet and top with club soda.

Shake all ingredients really strenuously with ice; strain into tall, chilled glass (about 10-12 ounce capacity), top with chilled seltzer.
