Pisco Sour

6 cl Pisco
2 cl Zuckersirup
3 cl Limetten- oder Zitronensaft
1 Eiweiß
Alle Zutaten mit Eiswürfeln schütteln, ins Shakerglas abseihen, ohne Eis aber dafür mit Spirale ein zweites Mal kräftig schütteln, bis sich gut Schaum gebildet hat, ins Glas geben. Auf den Schaum Amargo Chuncho oder Angostura Bitter sprühen, alternativ Muskatnus drüberreiben.

Das Originalrezept wurde von seinem Erfinder mit ins Grab genommen, das angegebene Rezept entspricht der Rekonstruktion von David Wondrich, wobei er den Zitronensaft mit "juice of half a (small) lemon or lime" aufführte.

Kirschwasser, to rinse the glass
2 ounces Peruvian Pisco
3/4 ounce Aperol
1/2 ounce lemon juice
1/2 ounce grapefruit juice
3/4 ounce simple syrup
1 grapefruit twist, for garnish
Pour a little kirschwasser into a highball glass and swirl the glass to coat the interiorr. Fill the glass with ice. Fill a cocktail shaker two-thirds full of ice and add the remaining ingredients. Shake for approximately 15 seconds, and strain into the highball glass. Add the garnish.
